Okey Dokey Yummy Gnocchi!

This week, I unleashed my inner Italian and made gnocchi.

I must admit, I was pretty impressed with myself.

This all came along because we had leftover mashed potatoes from our Thanksgiving feast and I wanted to find a way to use them that wasn’t just mashed potatoes with interesting toppings. Google came to the rescue. Who knew googling “repurpose mashed potatoes” would give me so many results?!

I settled on this gnocchi recipe because it sounded fancy and was really easy. Like, the gnocchi itself was only 4 ingredients easy. I wanted to do something other than your typical pasta sauce so another google search (gnocchi sauce) gave me this tasty recipe. The sauce recipe called for sage – we didn’t have any. I used Italian seasoning instead (it has sage in it so that counts…right?) and I thought it was delicious!

Making the actual gnocchi was super quick and easy. They look so cute!

But the sauce didn’t turn out so great the first time. My pan was too hot and this particular pan seems to burn everything really quickly. My butter and garlic instantly turned into an charred, stinky mess.

This recipe is a definite keeper, especially when you want a hot meal with little prep – perfect for weeknights after school when I don’t feel like doing a darn thing.
